That’s who I am

My passion for the art of baking was born in the heart of my parents’ pastry and bakery, a small artisan laboraty where from childhood I would wander among the sacks of flour and sugar looking for the dessert of the day to steal. Growing up I followed my passion for Cinema, studying photography, this allowed me to work a few years in close contact with technique and discipline that characterize film sets and totally immerse myself in the world of art and creativity .

I was able to experience and learn a lot from this experience, and it was here that I collaborated in a documentary series in the food industry and rediscovered my roots. In the role of storyteller through images, I perceived the importance of food as the language and cultural medium of a territory and a people; this aspect led me to want to delve into the production sector, a world familiar to me because it represents the reality in which I took my first steps. I tried then, to challenge myself again by reproducing old family recipes and then tweaking them modernizing them and developing new products.

Turning our gaze toward the future with a firm grasp of history and tradition and resurrecting the authentic flavors of Monferrato.

Piedmont Hazelnuts PGI

IGP Piedmont Hazelnuts are a globally recognized excellence. Grown in the hills of the Langhe, Roero and Monferrato, they benefit from a unique microclimate and mineral-rich soil, which give them a full flavor and extraordinary aromaticity.
Their crunchy texture and intense fragrance make them perfect for enhancing our artisanal pastries.
We use them in grain or flour, to create desserts in which the quality of the raw material is the absolute protagonist.

Sicilian Almonds

Sicilian almonds, particularly those grown in the Noto area, are a true treasure of the Italian confectionery tradition. Thanks to Sicily’s hot and dry climate and the area’s calcareous soils, these almonds develop a sweet and delicate flavor, with an aromatic persistence that distinguishes them from any other variety. They are rich in natural essential oils, which make them soft and enveloping to the palate. In our pastries we use them to give sweets a refined taste and a unique texture, capable of evoking all the warmth and sunshine of their land of origin.

The Butter

An essential ingredient for our pastry creations!
The butter we use is obtained by centrifuging high quality cream. It comes from dairy cows that graze freely in the enchanting Piedmont Alps.
This attention to provenance and quality ensures a refined flavor and perfect texture to our desserts.

Italian Grain Flour

The flour we use in our pastries comes from a careful process that enhances the intrinsic qualities of Italian grains. Selected, high-quality grains, grown in territories with a long agricultural tradition, are processed using slow methods at low temperatures. This process, preserves the organoleptic and nutritional properties of the grain, giving the flour an authentic flavor and an ideal texture for making our doughs.
Low-speed milling allows the fiber and essential elements of the seed to remain intact, guaranteeing a genuine product that makes our creations even more special.

The Chocolate

The dark chocolate we use is one of the most valuable raw materials for our confectionery. We carefully select high quality chocolate, prized for its careful processing that brings out its aromatic intensity and unique sensory notes.
The result is a chocolate with a rich and deep flavor, ideal for enriching our cookies and creating the right balance between sweetness and bitterness.
