Spaghetti with Garlic, Oil and “Fiery Breadcrumbs” with Chili SALATì
Today we are celebrating together with SALATÌ al Peperoncino a mainstay of Italian tradition, Spaghetti Aglio e Olio, but with my own bold and personal twist.
Imagine the sublime simplicity of an iconic dish, enhanced by the fragrance of garlic and the gold of extra virgin olive oil. But the real stroke of genius, the element that ignites taste and curiosity, is my “Infuocato Pangrattato.” This is not just a simple breadcrumb, but a crispy and spicy mixture made from our extraordinary Chili SALATÌ. They will be the ones to give each forkful a new dimension: a surprising crunchiness and an enveloping heat that will win you over at the first taste.
Get ready to rediscover a classic with an explosion of flavor!

Perfect Recipe Pairings. paghetti Aglio, Olio e “Pangrattato Infuocato” with SALATì al Peperoncino
The right pairing can turn a good dish into a memorable experience. Here are my selections for your Spaghetti Aglio, Olio e “Pangrattato Infuocato”:
Recommended Wines: Elegance and Freshness
- Falanghina del Sannio: Its freshness, citrus and mineral notes, and a pleasant savoriness cleanse the palate of oil and marry beautifully with the garlic and chili pepper spiciness without overpowering the dish.
- Vermentino di Gallura DOCG: With its distinct minerality, hints of Mediterranean herbs and good structure, this Vermentino pairs well with the complexity of garlic and “fiery” crunch, offering a refreshing contrast.
- Rosato del Salento (Negroamaro): A more structured rosé, with notes of red fruits and a slight spiciness. Its freshness and backbone can hold its own against the spiciness and roundness of the oil, creating a harmonious match.
Alcoholic Drinks: Cocktails That Impress
- Moscow Mule: The freshness of lime, the spiciness of ginger, and the effervescence of ginger beer create a refreshing drink that enhances the heat of the chili on the plate and cleanses the palate of oil.
- Spicy Margarita: Tequila, fresh lime juice and simple syrup, with the addition of a touch of chili (or jalapeño). This cocktail amplifies the spicy theme of the dish, providing a bold and complementary experience.
- Gin Fizz with a touch of ground black pepper: The citrusy freshness of the lemon and the herbaceous note of the gin, combined with the effervescence and slight spiciness provided by the pepper, create a lively combination that enhances the garlic and “fiery breadcrumbs.”
Non-alcoholic Drinks: Freshness for All
Even without alcohol, you can create pairings that enhance the recipe.
- Cucumber, Lime and Mint Flavored Water: An extremely refreshing drink that cleanses the palate and offers a pleasant contrast to the spiciness and oil of the dish, without covering up the flavors.
- Fresh Lemonade with Ginger and a Hint of Cayenne: The acidity of the lemon degreases the palate, and the ginger adds a hint of heat that bonds with the chili, creating an energizing and thematic drink.
- Spiced Tomato Juice (alcohol-free Virgin Mary): With the addition of Tabasco, Worcestershire sauce and pepper, this “by concordance” drink intensifies the savory and spicy side of the dish, offering a complete experience for lovers of bold flavors.
Choose the combination that best suits your taste and the occasion to make your Spaghetti Aglio, Olio e “Pangrattato Infuocato” with SALATì al Peperoncino an unforgettable experience!
