The Monferrato: where flavour is born

Hills of vineyards, PGI hazelnuts, medieval castles and one of Italy's richest gastronomic traditions. The land that gives identity to everything we create.

The Land

Acqui Terme and the Alto Monferrato: an ecosystem of excellence

The Monferrato is one of the most extraordinary gastronomic areas in Europe. Recognised as a UNESCO World Heritage Site together with the Langhe and Roero, this hilly land between Asti and Alessandria is home to a concentration of outstanding produce unmatched anywhere in the world.

Acqui Terme, our home, is the heart of the Alto Monferrato: a spa town of Roman origin, set in a landscape of vineyards, hazelnut groves and truffles. This is where Valerio Volpe built his pastry workshop, drawing every day on the extraordinary ingredients this land has to offer.

The Piedmont Hazelnut PGI — the "Tonda Gentile delle Langhe" — grows on the very hills around us. It is the ingredient that defines the flavour of our Baci di Dama and many of our creations.

The Excellence of the Land

One Land, a Thousand Flavours

The Monferrato is not just a landscape: it is a concentration of gastronomic biodiversity recognised throughout the world.

Piedmont Hazelnut PGI

The Tonda Gentile delle Langhe, grown on UNESCO World Heritage hills. The signature ingredient of our pastry.

Brachetto d'Acqui DOCG

The sweet sparkling wine of our town. A perfect companion for Piedmontese sweets.

Barbera d'Asti DOCG

The red wine symbol of the Monferrato, full-bodied and aromatic. Witness to a thousand-year winemaking tradition.

Acqui Terme Truffle

The hills around Acqui hide truffles of extraordinary quality. A unique gastronomic treasure.

Thermal Waters

Acqui Terme is famous for its sulphurous thermal waters. La Bollente, in the main square, flows at 75°C.

UNESCO World Heritage

The vineyard landscapes of Barolo, Barbaresco, Langhe-Roero and Monferrato have been a UNESCO World Heritage Site since 2014.

I understood the importance of food as a language and cultural medium of a land and its people.
