Panissa is one of the oldest preparations of Piedmontese and Ligurian folk cooking: a simple, humble chickpea polenta, slowly cooked and served in countless variations. Salatì Panissa reinterpret it in biscuit form.

Chickpea flour is the main ingredient — naturally free from wheat gluten, rich in protein and fibre. Fresh rosemary and extra virgin olive oil complete the aromatic profile with notes that are Mediterranean and Alpine at once.
