The recipe is disarmingly simple: chopped Piedmont Hazelnut IGP, whipped egg white, sugar and flour. Four ingredients that come together in a biscuit that is crunchy outside, slightly yielding inside, with an aroma of toasted hazelnut that unfolds slowly.
It is precisely this simplicity that makes them so good: when the ingredients are of this quality, any addition would be a subtraction.
